Oh my gosh. Chili and cornbread. It’s the winning combination in cooler weather. Every Halloween I make a big batch of both things (chili recipe coming soon!) and have friends over to eat while we pass out candy around the firepit. 🔥 I look forward to this tradition every year!
I have tried several cornbread recipes and this one is by far my favorite! It’s the easiest recipe too, which is a huge plus! Not too moist, not dry, just perfect! A couple tips with cornbread:
1. Don’t overmix the batter!
2. Make sure the eggs and milk are at room temperature. Let the melted butter cool slightly before mixing.
3. Don’t overcook! This will yield a dry cornbread.
Ingredients:
*1 cup yellow cornmeal
*1 cup all-purpose flour
*2/3 cup granulated sugar
*3 1/2 tsp baking powder
*1 tsp kosher salt (I use kosher)
*1 large egg
*1 cup milk
*1/3 cup melted butter
